🧁戚風小蛋糕Chiffon Fluffy Cupcake

配方:

5個雞蛋85克

(4/5杯)中筋面粉

15克(1湯匙)砂糖(用於蛋黃)

40克(2 1/2湯匙)牛奶

40克(3湯匙)食用油

40克(3湯匙)砂糖(用於蛋清)

200克淡奶油

20克(2湯匙)糖粉

製作步驟:

1.準備工作:將一個碗和攪拌頭放在冰箱裡,冷卻30分鐘。然後將烤箱預熱至325F

2.製作麵糊:將蛋清和蛋黃分開。然後用打蛋器將蛋黃和砂糖混合,直至顏色變淺。然後加入油和牛奶,繼續攪拌直至完全混合。加入過篩過的中筋面粉,攪拌至完全混合。

5.打發蛋白霜。將蛋清倒入一個乾净的大盆中,高速打發蛋清。逐漸加入白糖,直到達到堅硬的小彎鈎。將蛋清加入蛋黃3次,直至完全混合。注意不要過度攪拌它,以免使蛋清消泡。

6.將麵糊倒入到紙杯蛋糕杯至9分滿,在堅硬的台面上輕輕敲打幾下去除氣泡。然後放在烤盤上。烘烤25分鐘,或直到頂部開始破裂並變成啞光為止。用牙籤插入紙杯蛋糕中呈乾淨或無干屑狀態就表明蛋糕熟了。放在架上完全冷卻。

Fluffy chiffon cupcakes:

Ingredients:

5 eggs 85g

(4/5 cup) cake flour

15g (1 tbsp) granulated sugar | for egg yolks

40g (2 1/2 tbsp) milk

40g (3 tbsp) cooking oil

40g (3 tbsp) granulated sugar | for egg whites

200g Heavy Cream (For Topping)

20g( 2tbsp) Powder sugar (For Topping)

1. Preparation: Put the bowl and whisk In the fridge chill them for 30 min. Then Preheat your oven to 325F

2. Making Batter: Separate the egg whites from the egg yolks.Then using a Whisk mix egg yolks and granulated sugar until significantly lighter in colour. Then Add canola oil and milk and continue whisking until thoroughly incorporated. Switch to low speed and add cake flour. Whisk until just combined.

3. Beating EGG WHITES. Take out the bowl and whisk from fridge. Pour egg white into the bowl, beat egg whites until foamy. Gradually add sugar until you reach stiff peaks. Add the egg whites into the egg yolks three times until completely combined. Be careful not to overdo it so as not to deflate your egg whites.

4. TRANSFER TO CUPCAKE CUPS. Transfer your batter into cupcake cups until they are 3/4 full tap against a hard surface a few times. Then place on baking sheet. Bake for 25 minutes or until the tops start to crack and turn matte. A toothpick inserted into a couple of cupcakes should come out clean or with minimal dry crumbs. Set on a wire rack to cool completely.

5. Making The Topping: To make the whipped cream topping, simply get your chilled bowl and whisk from the fridge and whisk all your ingredients until you reach stiff peaks.
