🍮傳統紅糖年糕

食材: 糯米粉 700g 粘米粉 150g 紅糖片或紅糖400g 水 800g 紅棗幾顆 香蕉葉或粽子葉幾片


製作方法: 步驟1: 先將800g水煮開放入紅糖片化開,放涼備用。 步驟2:燒水將葉子在開水裏煮軟,洗乾净並擦乾鋪在8寸的蛋糕模或錫盤裏(可以用其他容器)。底部要多鋪幾層以防漏底。剪掉多餘的葉子備用。 步驟3:將糯米粉和粘米粉放入一個大盆裏,倒入冷卻的糖水混合均匀。 步驟4:將混合好的麵糊導入模具,倒8分滿就可以了(等下蒸的時候會膨脹,不能倒太滿),可以震幾下去除氣泡。 步驟5:在一個蒸鍋倒入足夠的水燒開,放入年糕隔水蒸70分鐘左右后,開蓋在年糕表面放入幾個紅棗,繼續蒸10分鐘。用筷子插入年糕,取出時年糕沒有黏在筷子上説明年糕蒸好了。關火小心取出年糕放涼。剛蒸好的年糕太軟不適合馬上吃。建議年糕冷卻后放在冰箱1-2天等年糕完全變硬后再切片。


吃法: 把年糕旁邊的葉子剝掉,切片。預熱平底鍋倒一點油,鋪上年糕片,加一點水蓋上蓋子煎至兩面金黃並燒乾水。趁熱裝盤,每片年糕不要重叠在一起,要不然會全部粘在一起。


🍮Simple Way to Make Chinese Traditional Brown Sugar Rice Cake

💦Ingredients: Sweet rice flour 700g Rice flour 150g Brown sugar 400g Water 800g A few red dates A few pieces of banana leaves


💦Processing: Step 1: First boil 800g of water into the brown sugar, and let them cool for later use. Step 2: Boil the leaves in boiling water to soften, wash and dry them, spread them in an 8-inch cake pan or a tin plate (other containers can be ok ). Place a few more layers on the bottom to prevent leakage. Cut off the excess leaves and set aside. Step 3: Put the sweet rice flour and rice flour into a large bowl, pour in the cooled sugar water and mix well. Step 4: Put the mixed batter into the mold and pour it to 80% full (it will expand when it is steamed, so it can't be poured too full). You can shake it a few times to remove bubbles. Step 5: Pour enough water in a steamer to boil, put the rice cakes and steam them for about 70 minutes, open the lid and put a few red dates on the surface of the rice cakes, and continue steaming for another 10 minutes. Use chopsticks insert the rice cake, and the rice cake does not stick on the chopsticks when you take it out. Turn off the heat and carefully remove the rice cake and let it cool down. The steamed rice cake is too soft to eat right away. I will recommended that let it cool down first and then placed it in the refrigerator for 1-2 days until the rice cake is completely hardened before being sliced.


💦How to eat: Peel off the leaves beside the rice cake and slice them. Preheat the pan, pour a little oil, place the rice cake slices, add a little water, cover the lid and fry then until golden on both sides. Put it on a plate but don't overlap each piece of rice cake, otherwise it will all stick together. Serve it while it's hot, enjoy!!😋
